A few months ago we posted our Coffee Cake Crumble Cheesecake Bars. They are a twist on our mom’s famous coffee cake recipe which we are sharing here. Growing up, mom always made this in a 9×13 pan but recently we’ve started making mini muffins instead. These one bite muffins are loaded with the cinnamon streusel topping which has always been our favorite part of the cake. Give our delicious Cinnamon Streusel Coffee Cake Mini Muffins a try. They are great for breakfast or brunch or as an anytime snack.

This recipe is so easy to make with ingredients you might already have on hand. If you don’t have buttermilk, don’t forget about using an easy substitution. Our favorite is 1T white vinegar plus enough milk to make one cup. Stir to combine and let stand one minute before adding in the baking soda that the recipe calls for.
These Cinnamon Streusel Coffee Cake Mini Muffins are so moist and delicious. You will not be able to eat just one or two or three… Fortunately, this recipe makes 48 mini muffins so there will be plenty to share.

Thank you for stopping by! My girls love them so I’m sure yours will, too!
My kids would love these! I have everything but the buttermilk. Do you think I can swap it out for soymilk???
I always use a substitute of vinegar or lemon juice mixed with milk in place of buttermilk (1T white vinegar or lemon juice plus enough milk to make 1 cup, stir and let stand for 5 minutes) I’ve never tried it with soymilk, though, so I’m not sure how it would turn out! If you try it and it works, please let me know!
You had me at the word coffee 🙂
Do you think I could leave out the eggs and use a non-dairy milk instead of buttermilk? (I’m vegan…)
I have never made it without eggs or with non-dairy milk. You could try substituting applesauce for eggs and then a buttermilk substitute (1 T vinegar or lemon juice plus enough non-dairy milk to make 1 cup, stir and let stand for 5 minutes.) Let me know if you try it and how it turns out!
Looks delicious. Thanks for sharing at the What’s for Dinner link up – and Happy Thanksgiving!
