Every year for our Super Bowl party I try to come up with recipes inspired by the teams who will be playing. This year, when I found out the Los Angeles Rams would be in the Super Bowl I decided on this delicious California Grilled Chicken Pizza. It’s full of fresh ingredients such as tomatoes, avocados and alfalfa sprouts which always make me think of California. A pre-made pizza crust makes it easy to put together and have ready for your guests in no time at all.

Cream cheese and shredded mozzarella provide a yummy base for all the toppings. It’s the perfect white sauce for this pizza.
Grilled chicken, bacon, and tomatoes are added to the sauce and baked for a few minutes. Finally, crunchy alfalfa sprouts and creamy diced avocado are added to complete this mouth-tingling delight. To make this even easier, you could always substitute chopped rotisserie chicken or even chopped deli turkey slices.
Ingredients
- 8 oz grilled chicken breast, cubed (approximately 1 c cubed chicken)
- 1 – 14oz Boboli Original Pizza Crust (or your favorite 12” pizza crust)
- 2 t olive oil
- 6 oz cream cheese, softened
- 1 cup shredded mozzarella cheese
- 4 slices of cooked bacon, cut into large pieces
- ½ cup grape tomatoes, cut in half
- 1 cup alfalfa sprouts
- 1 medium avocado, diced
Instructions
- Pound chicken breast to an even thickness and grill on a pre-heated grill at 400 degrees for 4 minutes per side (internal temperature should be 165 degrees) and then cut into small cubes
- Brush crust on both sides with olive oil, put on a pizza pan and bake at 450 for 5 minutes
- While the chicken and crust are cooking, mix together the softened cream cheese and shredded mozzarella cheese
- Spread cream cheese mixture onto warmed crust, then add the cubed grilled chicken, bacon, and grape tomatoes
- Bake at 450 for 10-12 minutes until cheese is melted
- Right before serving sprinkle on the alfalfa sprouts and diced avocado
