Football parties are some of my very favorite parties to throw. Whether it’s a big Super Bowl bash or a weekly college game day get together, spending time with friends and family to cheer on our favorite team is always a winner in my book! I love the food and camaraderie of a fun football party and enjoy coming up with new recipes to serve my guests. For our Super Bowl party last year I made these super yummy Cheese & Bacon Stuffed Dill Pickles and let me tell you…they were a HIT! Of all the food we served that evening, they were the first to disappear!
They are a cinch to prepare with easy store-bought ingredients including a jar of baby dill pickles, cream cheese, shredded cheddar cheese, bacon bits, and sour cream.
Begin by cutting a little slice off one side of the baby dill pickles. Next scoop out the seeds then place cut side down on a paper towel to drain the juice from the center of the pickle.
While the pickles drain, mix the softened cream cheese, shredded cheddar cheese, bacon bits, sour cream, pickle juice, and garlic powder. Place the mixture into a plastic sandwich baggie and cut off a corner of the baggie. Fill each of the pickles with the cheese and bacon mixture. You can either serve immediately or place in the refrigerator until it’s game time. For a little extra kick, you can add finely diced jalapenos if you’d prefer.
There’s really only one problem with these appetizers, they go FAST! If you’re having a large crowd (or if you have several dill pickle lovers in your family) you may want to double or triple the recipe! I’m just warning you ahead of time!
Ingredients
- 24 oz jar of baby dill pickles

- ½ c shredded sharp cheddar cheese
- 2 Tbsp bacon bits
