One of our favorite family recipes is a coffee cake our mom first made when she was in junior high.  It’s hard to mess with a classic, but I took the flavors we loved and turned them into a scrumptious cheesecake bar. The crust is made using my mom’s actual coffee cake recipe followed by a coffee and cinnamon infused cheesecake batter then finished with the leftover crust ingredients which are crumbled over the top. These bars are so delicious and are now a new family favorite.

Coffee Cake Crumble Cheesecake Bars

Ingredients

  • Crust
  • 2 ½ cups flour
  • 1 cup brown sugar
  • ¾ cup white sugar
  • 1 tsp salt
  • 1 ½ tsp cinnamon
  • ¾ cup butter, melted
  • Filling
  • 3 – 8 oz package of cream cheese
  • 1 cup white sugar
  • 3 large eggs
  • ½ c. sour cream
  • 3 Tbsp strong coffee
  • ½ tsp cinnamon

Instructions

  1. Preheat oven to 350 degrees F.
  2. In a medium bowl, combine all of the dry crust ingredients (flour, brown sugar, white sugar, salt & cinnamon) and then stir in the melted butter. Reserve 1 cup for the topping.
  3. Press the rest of the crust mixture evenly into a greased 9x13 baking pan. Bake 15 minutes or until lightly browned.
  4. In large bowl, beat cream cheese and sugar with an electric mixer until fluffy. Add in eggs, sour cream, coffee and cinnamon until well blended. Pour over warm crust.
  5. Sprinkle the reserve crust mixture over the top.
  6. Bake 40-45 minutes, or until filling is set.
  7. Refrigerate for at least 30 minutes. Slice into bars and serve cold.
