An Instant Pot electric pressure cooker is the most convenient way to cook a batch of boneless, skinless chicken breasts that you can dice or shred and use in recipes throughout the week. If you want plain diced/shredded chicken check out our instructions for making frozen boneless, skinless chicken breasts in the electric pressure in less than 25 minutes. However, if you plan to use the chicken in your favorite taco or enchilada recipe or in our Chicken Tamale Bake you’ve got to try this delicious Fajita Seasoned Shredded Chicken. In no time at all, you will have a whole batch of chicken to feed a crowd. You could also freeze in smaller portions so it’s ready to go when you need a quick and easy meal.
To make this easy recipe simply place frozen boneless, skinless chicken breasts in your Instant Pot electric pressure cooker, sprinkle salt and Fajita seasoning mix and pour in the chicken broth and lime juice. Place lid on the pressure cooker, set cook time for 12 minutes and let it go.
When the cook time is up, carefully do a manual/quick pressure release and remove the chicken breasts to a cutting board to cool a bit. Shred the chicken and place it back in the broth for a few minutes to re-heat and soak up all of the delicious fajita flavor. Place shredded chicken in a serving bowl and reserve broth to use for other recipes including our Fiesta Corn Fideo. Any leftover broth can be frozen and used at a later time.
This shredded chicken is perfect to use in a chicken fajita salad. Just add sliced red and green bell peppers, place on a bed of romaine lettuce and serve with the dressing of your choice. You can also use it to make shredded chicken tacos, enchiladas, quesadillas, and our Chicken Tamale Bake. The possibilities are endless.
Ingredients
- 3 lbs frozen boneless, skinless chicken breasts
- 1 14.5 oz can of chicken broth
- 3 Tbsp lime juice
- 1/2 tsp salt
- 2 packets of Fajita seasoning packets, approx 1 oz each
Instructions
- Place frozen chicken breasts in the Instant Pot electric pressure cooker
- Sprinkle the salt and Fajita seasoning packets over the chicken breasts
- Pour the broth and lime juice over the chicken breasts
- Place lid on pressure cooker and set cook time for 12 minutes. (I use the default cook setting which cooks at 70kPa. My machine's default cook time is 15 min so I hit the cook button until it goes up to 30 min then starts over at 1min)
- Please note it will take approximately 10 minutes to pressurize then when the cooking time is up, use the quick/manual pressure release.
- Put the cooked chicken breasts on a cutting board and let them cool a bit. When they are cool, use 2 forks or your hands to shred.
- To re-heat and soak up more fajita flavor, place the shredded chicken back into the electric pressure cooker with the delicious fajita seasoned broth for a few minutes.
- Using tongs place the shredded chicken in a serving dish and save the broth to use for other recipes.
