As I mentioned the other day, my girls always insist on Tacos/Mexican Food on Tuesdays. In addition to traditional tacos, enchiladas, burritos, nachos and taco salad, I like to serve recipes with a Mexican twist. This Instant Pot/Electric Pressure Cooker Fiesta Nacho Cheese Mac was a recipe I came up with when I needed something fast for dinner on a Tuesday. It is so easy to throw together and thanks to the Instant Pot it will be ready in about 20 minutes. It’s also very kid-friendly! That’s a winning combination in my opinion!

The secret to this creamy dish is a can of Fiesta Nacho Cheese soup. Add a can of petite diced tomatoes and a can of black beans along with some browned hamburger and taco seasoning and your prep work will be done.
Cook for a quick 5 minutes in the Instant Pot or electric pressure cooker, do a natural pressure release for 5 minutes then add some shredded cheese to make it extra cheesy. You can use any kind of cheese you’d like. Cheddar, Colby Jack, Mexican blend, Triple cheddar, you name it and it will work just fine! If you’d like a little more spice you can substitute a can of Ro-tel for the petite diced tomatoes. I garnished it with cilantro before serving but you could also garnish with green onions if you’d like.

Ingredients
- 1 lb ground beef or ground turkey
- 1/2 large onion, diced
- 2 c water
- 1 oz package taco seasoning mix
- 10 3/4 oz can Fiesta Nacho Cheese soup
- 14 1/2 oz can petite diced tomatoes, undrained
- 15 1/4 oz can black beans, drained
- 2 c (8 oz) macaroni, uncooked
- 1 tsp salt (or to taste)
- 1 c shredded cheese (cheddar, Colby Jack, Mexican blend, etc)
- cilantro or green onions for garnish, optional
Instructions
- Brown ground beef or turkey and onion using saute feature.
- Turn off saute and drain if necessary.
- Add water, taco seasoning, Fiesta Nacho Cheese soup, petite diced tomatoes, black beans, macaroni and salt then stir to combine.
- Place the lid on the Instant Pot or electric pressure cooker and make sure it's set to seal, not vent.
- Cook for 5 minutes using the manual setting.
- When the cook time is up, do a natural pressure release for 5 min then do a quick release.
- Open the lid carefully and stir in shredded cheese until it's melted.
- Before serving, garnish with cilantro or green onions if desired.
