No Bake Lemon Cheesecake Pie is a refreshing dessert made with whole lemons and cream cheese in a delicious crust of lemon flavored vanilla wafer cookies. It’s cool and creamy and the perfect combination of sweet and tart!

There is no shortage of lemons this time of year here in Arizona. You can easily drive through a neighborhood and see bags of free lemons and other citrus in people’s driveways. I always pick up a bag or 2 so I can make my favorite lemon flavored treats. For Mother’s Day I wanted to make a lemon pie, however, it’s been so hot out and I didn’t want to turn on the oven so I came up with this No Bake Lemon Cheesecake Pie. It’s made with whole lemons. Yes, WHOLE lemons. Peel and all! Trust me, you’ll love all the yummy little lemon pieces in each delicious bite. Give it a try the next time you’re craving something lemon-y!
The crust is made with tasty Lemon Nilla Wafers. If you can’t find Lemon Nilla Wafers you could use plain vanilla wafer cookies or graham crackers.
A WHOLE lemon is the star ingredient in this delicious cheesecake pie. It’s cut into chunks with the seeds removed then pulsed in a food processor with some powdered sugar until it’s in small pieces.
Cream cheese and 2 to 3 tablespoons of instant vanilla pudding mix are added to the lemon and sugar mixture then poured into the crust.
Whipped topping with a garnish of lemon zest and a slice of lemon is the final touch. Refrigerate the pie for at least an hour before slicing and serving.
Ingredients
- Crust
- 2 c Lemon Nilla Wafers Crumbs (about 60 cookies)
- 1/4 c powdered sugar
- 1/2 c butter, melted
- Filling
- 1 large lemon or 2 small lemons
- 1 1/2 c powdered sugar
- 12 oz cream cheese
- 2-3 T instant vanilla pudding mix
- 1 8 oz container whipped topping
- Additional lemon to zest and slice for garnish
Instructions
- Place cookies in a food processor and pulse until they are fine crumbs
- Add powdered sugar to the food processor and pulse until combined
- With the food processor running, drizzle melted butter until crumbs stick together
- Press the crumbs into the bottom and up the sides of a pie pan (use a glass or a measuring cup to smooth the crumbs and press them firmly into the pan)
- Refrigerate crust for 30 minutes to 1 hour
- While the crust is in the refrigerator wash the lemon(s) and cut into large chunks, removing the seeds (Do not peel. You will use the whole lemon)
- Place lemon pieces and powdered sugar in the food processor and turn it on for 30 seconds Stir and make sure there are no large pieces of lemon left. If there is, pulse a few more times until the lemon pieces are very small
- Add in the cream cheese and pulse until well combine with the lemon and sugar mixture
- Add 2 Tbs of instant vanilla pudding mix and pulse until well combined and the mixture thickens. If it is still too runny add another tablespoon of the pudding mix
- Scoop the mixture into the chilled pie crust
- Spread the whipped topping on the pie
- Refrigerate for at least 1 hour or overnight
- Garnish with the lemon zest and lemon slice
