Fiesta Corn Fideo is a delicious twist on a classic Mexican fideo recipe. Make it in the Instant Pot Electric Pressure Cooker for a tasty side dish at your next Mexican meal.

Fideo is a delicious pasta dish served at many Mexican restaurants. While not as popular as Spanish rice, it is a unique accompaniment to your favorite Mexcian meal. If given a choice at a restaurant I always choose the fideo. The typical recipe is made with a tomato base but I decided to change it up by adding corn and Fajita seasoning mix to give it a nice twist. You can, of course, make it on the stove but I always prefer to use the Instant Pot!
You can find Fideo at most major grocery stores in the pasta or Hispanic food section. There are several different brands to chose from. You can also make your own by breaking thin spaghetti or angel hair pasta into 1″ – 2″ pieces. If you happen to make our Fajita Seasoned Shredded Chicken, save the extra broth and use it to make this Fideo. You can then enjoy delicious shredded chicken tacos with a side of Fiesta Corn Fideo!
Ingredients
- 1/2 of a 16oz box of Fideo pasta
- 1 14.5 oz can of chicken broth
- 2 T lime juice
- 1 packet Fajita Seasoning mix, approx 1 oz
- 1 15 oz can of corn, drained
- (Alternate: Can use 2 c leftover broth from Fajitas Seasoned Shredded Chicken in place of chicken broth, lime juice and seasoning mix)
Instructions
- Pour broth, lime juice and Fajita Seasoning mix in pressure cooker
- Stir in the pasta and corn
- Place lid on pressure cooker and set cook time for 4 minutes (I use the default cook setting which cooks at 70kPa. My machine's default cook time is 15 min so I hit the cook button until it goes up to 30 min then starts over at 1min)
- When the cooking time is up, use the quick/manual pressure release if you prefer al dente pasta or let the pressure come down naturally for a softer pasta
- Stir and pour into a serving bowl
