I love collecting cookbooks. My favorites have always been the ones from small town churches, schools, businesses and extension clubs. It’s probably because the recipes in those types of cookbooks are the ones I grew up with. Beloved recipes of casseroles that were given to a family after the death of a loved one, salads or appetizers that were taken to a potluck or a family favorite dessert that was always present at the holidays. Those are the types of recipes I always seek out when I want some comfort food. On a recent trip to my hometown I purchased a box of area church cookbooks from an estate sale. The names of those who submitted the recipes are all familiar to me and bring back so many memories. I spent hours reading through the recipes and remembering all the good times I had growing up. One of the recipes was for a unique shrimp dip that I had never tried before. I tweaked it a little and came up with a delicious warm dip that was perfect for our Nebraska football party last Saturday. We might not have won the game, but the dip sure was a hit!

Besides the standard cream cheese and mayonnaise, this shrimp dip is made with tomato soup which gives it a delicious rich, tomato flavor and compliments the shrimp nicely. Old Bay Seasoning was added to the original recipe to give it a little kick!
Garnish with chopped green onions if you’d like and serve with chips or crackers. This Shrimp Dip has become a new favorite in our house!
